Ingredients
- 1 cup firmly packed brown sugar
- 1/2 cup butter or margarine
- 2 apples, cored and chopped
- 1 cup golden raisins
- 1/2 cup brandy
- 5 cups cooked brown rice*
- 1 cup chopped walnuts
- 1 1/2 teaspoons ground cinnamon
- 1 pint vanilla ice cream
Instructions
- Combine brown sugar and butter in large skillet. Cook over medium heat until sugar is dissolved. Stir in apples, raisins and brandy. Cook until apples are crisp-tender, stirring constantly.
- Fold in rice, walnuts and cinnamon. Serve topped with vanilla ice cream.
